What I Love About....Lasagna {with recipe}

Weird title I know.
But it's Monday again and it's time for what I love about...
And today I love my lasagna.

Not just my lasagna...but the people who eat it.

The kids saying a prayer before we eat.

I am SO blessed to be in an amazing Bible Study. It was such a "God Thing". James and I were just not connecting with our Church and felt God calling us to leave and join a church closer to our home. The first Sunday we attended we met the Wurth's. I bonded instantly with Lori, and joined their small group. In the three years that we have been a group people have come and gone, but we have stayed as a team.
They have all encouraged my walk with Christ and we have all bonded through various challenges and difficulties.

What makes our group fun is that we are all in the same "stage of life". There are 5 couples in the group with 14 kids. This is a pic of 11 of the 14 kids eating dinner at my house on Sunday night. It was SO loud, but I love the fellowship!


This is a rare moment of calm...yes it was before a giant storm of noise!

Our current group is SO strong. We have a core of strong believers who are hungry to learn about the Lord. I am so blessed by them. Right now 3 of the couples are on a volleyball team (we suck...it's true). But the "team dinners" before the games sure are fun.

Enter...Lasagna.


THE. BEST. LASAGNA. EVER.

Ingredients

  • 1 pound ground beef
  • 3/4 pound bulk pork sausage
  • 3 cans (8 ounces each) tomato sauce
  • 2 cans (6 ounces each) tomato paste
  • 2 garlic cloves, minced
  • 2 teaspoons sugar
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 eggs
  • 3 tablespoons minced fresh parsley
  • 3 cups (24 ounces) 4% small-curd cottage cheese
  • 1 carton (8 ounces) ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 9 lasagna noodles, cooked and drained
  • 6 slices provolone cheese
  • 3 cups (12 ounces) shredded part-skim mozzarella cheese, divided

Directions

  • In a large skillet, cook beef and sausage over medium heat until no longer pink; drain. Add the tomato sauce, tomato paste, garlic, sugar, seasoning, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 1 hour, stirring occasionally.
  • In a large bowl, combine eggs and parsley. Stir in the cottage cheese, ricotta and Parmesan cheese.
  • Spread 1 cup of meat sauce in an ungreased 13-in. x 9-in. baking dish. Layer with three noodles, provolone cheese, 2 cups cottage cheese mixture, 1 cup mozzarella, three noodles, 2 cups meat sauce, remaining cottage cheese mixture and 1 cup mozzarella. Top with the remaining noodles, meat sauce and mozzarella (dish will be full).
  • Cover and bake at 375° for 50 minutes. Uncover; bake 20 minutes longer or until heated through. Let stand for 15 minutes before cutting. Yield: 12 really hungry adults servings.


I hope that our group will stay strong and that our friendships will last a lifetime. God has been so good to us! It is my strong belief that all Christian couples should join together and form friendships and "do life" with each other! I hope you have found strong friends you can rely on as well!
