Scrumptious Egg Casserole

This is my "go to" egg dish. In fact I made it for Christmas morning because I could prepare it the day before. 

It's easy to prepare for a MOPS meeting the night before or a "comfort food" night. 

It's my Mom's…of course...

Layered Scrambled Eggs

Cream Sauce:
2 Tbs butter
2 Tbs flour
1 cup milk, heated
dash salt and pepper

Melt butter in pan. Whisk in flour. Stir over low heat until bubbly. Slowly whisk in hot milk, and stir over medium heat until bubbly and thick. Boil 1 minute. Add salt and pepper to taste.


Egg Layers:
8 large eggs, beaten
4 Tbs sour cream
4 Tbs cheddar-jack cheese, grated
4 strips bacon, cooked and crumbled (I used Turkey bacon in the pictures, but real bacon is way tastier)
1 tomato diced
2 green onions, diced

Preheat oven to 350 degrees. In a separate pan from the sauce, scramble eggs, but leave moist. Mix in cream sauce. Pour into prepared pan.


On the top of the egg layer spread sour cream and top with cheese, tomato, green onion, and bacon.

Bake for 20-30 minutes, until hot and bubbly.


I usually double or even triple this recipe depending on what I'm using it for.
The night before my MOPS meeting I'll make a HUGE batch and cut it in half and use some of it for my family and then cook the other half in the morning for MOPS. It's easy and delicious! But it's not "healthy". It's a great spurge meal for sure!

And the more I realize it…I don't post nearly enough of my healthy recipes on this blog. We'll call it a New Years Resolution (even though I don't believe in those at all).

I'll give you guys some better recipes later. But for now…enjoy the creamy deliciousness of this egg dish.

This looks great! I don't have a "go-to" egg dish, but I'm thinking this would work. I would use diced sweet bell peppers instead of tomatoes. Thanks for sharing!
